Yesterday I talked about those musicians playing from their souls and I feel like that about baking bread. I had a long gap in my breadmaking and when I started again a few years ago I discovered using sourdough.
Instant falling in love again! Wonderful to watch the dough live under your hands.
It's a completely different experience and though I don't make with sourdough all the time, the way you treat the dough has transformed my more usual way of breadmaking.
This last year I discovered the book by James Morton, one of the contestants on Bake Off. Never watched the programme but I love his book. It's straightforward so good for beginners as well as more experienced bakers.
The only problem I'm left with is that I'm now tempted to eat too much bread - and have to ration myself to once a day. A real struggle sometimes.Thanks for that James.
So I'm off now to commune with the dough and I'll try and upload a picture of the finished loaf later.
